Very yummy chicken recipe (hello? it’s covered in bacon – of course it’s good). It was also very quick to pull together, and included only ingredients I typically have on hand. Win!
You could bake this in the oven (as the directions explain), or, you could easily grill this as well and it would be delicious.
Also – despite the name, this isn’t actually “spicy”….and you can control that with your use of the chili powder. I’m a big fat pansy when it comes to spice and this is fine for me.
Sweet n Spicy Bacon Chicken
4 chicken breasts cut in thirds (12 pieces)
Bacon slices
salt and pepper to taste
garlic powder
chili powder
brown sugar
Preheat the oven to 400 degrees F
Grease a casserole dish (I used a 9 x 13 but it depends on the size of your chicken breasts)
Cut each breast into 3 pieces, season all the chicken with the spices, then wrap a bacon slice around each piece, roll in brown sugar and place into an oven proof dish.
Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked through and bacon is nice and brown and crispy.
Also great on the grill!
**The original calls for 2-3 tbsp of olive oil in the dish but that’s unnecessary. The original also calls for the drippings to be served over mashed potatoes, but let’s face it – it’s mostly bacon grease in the bottom of that dish!
