Well, we didn’t end up going to visit my family this weekend, as I had a miserable head cold all week and wasn’t feeling up to it….
Saturday: Made a big pot of beef stew to eat throughout the weekend (Since we had our “eat out” meal on Friday)
Sunday: Prep day…
- chop veggies and fruit for the week
- roast garlic and make these delicious mozzarella-filled meatballs
- make a loaf of bread
Monday: steak, steamed green beans, pasta
Tuesday: garlic lemon shrimp with orzo and broccoli
Wednesday: spaghetti and mozzarella-filled meatballs, salad
Thursday: grilled cheddar brauts, steamed or roasted cauliflower
Friday: meatball subs (using leftover meatballs from wednesday), chips, salad
