I’ll be travelling on Monday, but here’s the scoop for next week…(I actually planned this menu on Wednesday. It’s so weird planning mid-week for the FOLLOWING week)

Menu Plan Monday

Monday: grilled steak, steamed broccoli, pasta

Tuesday: vegetable-stuffed shells with tomato cream sauce

Wednesday: BBQ ribs, green beans…and maybe cornbread? We’ll see. Not sure on my sides for this one.

Thursday: Vegetable-stuffed shell leftovers

Friday: No plan. Maybe take ILs out for dinner for their anniversary?

Other: I think I’m going to make flax/coconut french toast for my work week breakfasts this week, and I’m looking at an avocado-stuffed mexican-y sweet potato for lunch. We’ll see how much time I have on Monday when I get home from my trip!
