Saturday: We had friends over for a casual cookout. We had: spicy honey chicken, burgers, cheddar brauts, taco pasta salad, buffalo chicken dip, veggie tray, and chips. Everyone brought something, so it was a mish-mash! 🙂
Sunday: Day o’ prep for the week (I find if I just take 2 hours Sunday morning to prep, my evenings go much faster during the week, AND I eat better at work. So…)
- Made homemade bread for DH’s lunches
- Chopped and cleaned broccoli and green beans
- Cooked, shredded, and seasoned chicken for my lunches this week
- Made mozzarella-filled meatballs for dinner Tuesday
- Made Super Charge Me Cookies
- Made multigrain waffles to re-heat for my breakfasts this week
Monday: filet mignon, steamed green beans, pasta
Tuesday: lemon-dill grilled salmon, lemon roasted broccoli, rice pilaf
Wednesday: Spaghetti with mozzarella-filled meatballs, side salad
Thursday: Breakfast for dinner — home fries, eggs, turkey sausage, and toast
Friday: Headed home for an impromptu weekend — no dinner plan!
