This is my “recovery week” menu –  all easy stuff that comes together quickly, after all those weeks of baking, prepping, wrapping, and other holiday stuff!

Saturday: Christmas with the In-Laws at my house: smoked ham, horseradish, mashed potatoes, baked pineapple, corn, green beans – and cookies for dessert!

Sunday: take-out

Monday: steak, steamed cauliflower, pasta

Tuesday: smothered pork chops, risotto, garlic sauteed green beans

Wednesday: garlic lemon shrimp with orzo and broccoli

Thursday: spaghetti with homemade meat sauce, salad, garlic bread

Friday: leftovers!
