I originally saw this on Caitlin’s blog…it looked tasty, and like a great healthy alternative for me to pack for my breakfast at work during the week.

Flax Coconut French Toast
2 slices bread (I used Ezekiel, but regular wheat would be fine)
3-4 egg whites
2 tbsp ground flax
2 tbsp unsweetened shredded coconut
– Mix the flax and coconut into the egg whites, dip your bread, and then pan fry in a nonstick skillet until golden and cooked through — tada!! 🙂
