Oh.my.god. These gyros. Okay – I am not going to lie – they are LABOR INTENSIVE. But with proper planning and a weekend to work with – they can be done. And they are TOTALLY worth it.

We originally had this over the summer, with garden tomatoes – but we’ve had it since then with ‘on the vine’ tomatoes from the grocery store and it is just as good! The tomato sauce has a VERY light flavor, and the cream adds a little richness. We love it and you will too.
I say maybe – because, well, I haven’t found another I love as much. But it’s possible, right? I got this one from a very good friend (and amazing cook!), Chera. It’s her family’s recipe, and it really is amazing!
Not low calorie…But amazing!
I don’t know why we waited so long to enjoy this treat – but we’ve remedied that situation. We love it and it’s super easy – and gives you a more of that ‘wood fired’ flavor you’d get at a pizzeria that cooks with wood stoves.
I whipped up this soup today as quick grab-and-go lunch for this week for me and hubby. (I’m not typically a ‘tomato soup’ lover) but it is very tasty. And SO quick – it’d be a great weeknight meal!
